18 Ways to Use a Rotisserie Chicken
Rotisserie chicken is something I almost always have in my freezer, which is why I wanted to bring you 18 Ways to Use a Rotisserie Chicken. It can be used in almost any recipe that calls for chopped or shredded chicken. It’s a “pantry” staple for me, and I buy one almost every week!
If you’re looking to make your own roasted chicken, I found this highly rated recipe here. It looks delicious, and I’ll definitely be giving it a try!
The first thing I do when I bring a rotisserie chicken home from the store is let it cool down a bit so it is easier to handle. Place it on a cutting board, and remove any string or plastic pieces that hold the legs together. Next, I always remove and discard the skin. This is personal choice. If you’re enjoying it immediately as a meal and want the seasoned skin on, by all means leave it!
The meat is always so tender, it basically comes right off of the bone. I start on one side and pull as much meat off the drummy and thigh as possible. Then do the same with the breast meat. Repeat on the other side. I leave the chunks fairly big if I am just freezing it, and then I’ll chop into smaller pieces if needed before using it in a dish.
I generally get about two cups of chicken from one rotisserie chicken. Store in an air tight container in the freezer for up to 3 months. I’ve been using these zip top silicone “baggies” lately and love them, definitely recommend! Onto the good part…RECIPES!
