Biscuit Pizza Burgers

Something I grew up eating regularly, but now with a twist, Biscuit Pizza Burgers! My family always made these with hamburger buns which is equally delicious, and a great option if you don’t have biscuits. If you want to serve these as an appetizer you could also use slider buns, but the biscuits I used were pretty small, and a great appetizer size.

The ingredients seem so simple (I mean they are), but the end result is SO GOOD and in my opinion a little unexpected. I like to keep mine pretty simple with just ground beef and green peppers. If you love other pizza toppings you could add those into the meat mixture as well, like olives, other veggies, or even mini pepperonis.

The biscuits

I used frozen biscuits that just get baked from their frozen state. You could also use canned from the refrigerator section, or make your own from scratch. I found the frozen variety to be smaller, but also perfect for an appetizer size.

The biscuits made a really nice vessel for the meat mixture. I found they hold up a bit better than hamburger buns. The meat mixture is packed with delicious flavor from onions, garlic, oregano, Italian seasoning, and cheeses. And the sauce? It’s just ketchup which seems odd if you’ve never made these. It adds a nice tang and sweetness that actually makes these what they are. Almost like an Italian sloppy joe. I think using a marinara or jarred pizza sauce would just give these a very different flavor profile.

Top the baked, halved biscuits with the meat mixture, then top with cheese.

Then just pop under the broiler for the cheese to melt and the biscuits get a little extra crispy and toasty on the edges. That’s it!

I also found the biscuits reheat pretty well for leftovers. I actually don’t mind cold leftovers…but I’ve always loved cold pizza!

Biscuit Pizza Burgers

An old-school family favorite with a couple twists! A delicious family meal or fun, crowd pleasing party food!

Ingredients

  • 6 biscuits (1 can of biscuit dough)
  • 1 lb ground beef
  • 1/2 medium yellow onion chopped
  • 3 cloves garlic minced
  • 1 green bell pepper diced
  • 1 tsp Italian seasoning
  • 1/2 tsp oregano flakes
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1/2 cup ketchup
  • 1/4 cup grated parmesan cheese
  • 1 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat oven according to the biscuit can instructions. Bake biscuits according to package instructions.

  2. While the biscuits are baking, prepare the filling. In a large skillet over medium-high heat, add ground beef, onions, bell pepper, and garlic. Break beef up with a wooden spoon, and cook until browned. Stir in Italian seasoning, oregano, salt and pepper, and red pepper flakes. Stir in ketchup and parmesan cheese. Heat through over medium. Reduce heat to low, or cover and remove from heat until biscuits are done.

  3. Slice baked biscuits in half horizontally, and place back on baking sheet pan. Scoop beef mixture evenly onto each half biscuit. Top with shredded mozzarella cheese. Place in oven under the broil setting until cheese is melted and bubbly. Garnish with a sprinkle of oregano or parsley.

Growing up we would use hamburger buns as our bread vessel, they also work great.

I’ve used frozen biscuit dough as well (pictured in blog post). They are a bit smaller than the canned dough, and make for a great appetizer size.

Leftovers heat up surprisingly well…and if you’re like me and love cold pizza, they’re good cold too!
