Turkey Sausage Egg White Frittata

If you’re looking for a flavorful, healthy, and satisfying meal then this Turkey Sausage Egg White Frittata is for you. It’s packed with healthy veggies and tangy feta cheese! We love to have eggs for any meal of the day, not just breakfast. I always have a container of liquid egg whites in the fridge, because I add them to things like my Easy Egg Muffins, and they last a long time!

Make your own breakfast sausage

Did you know you can easily make your own breakfast sausage? All you need is ground turkey (or pork of course) and a handful of items from your spice cabinet. If your spice cabinet is well stocked like mine, you probably don’t need to make any new spice purchases.

My favorite part about egg dishes is that you can add almost anything to them. Proteins, vegetables, and various cheeses. The combinations are endless! Such a great way to use up ingredients that are about to go bad! I used spinach, tomatoes, and feta in this frittata.

The frittata cooks almost all the way through right on the stove, and then I finish it in the oven under the broiler to cook the top. Make sure to use an oven-safe skillet. Something with a metal or cast iron handle, not plastic! I’ve had my All-Clad skillets for a handful of years, and they work perfect for this dish, no sticking!

Slice and serve! I love to enjoy this Turkey Sausage Egg White Frittata with hot sauce and avocado, yum! You could also make these into individual egg muffins and have breakfast ready in a breeze. I AWLAYS use my silicone muffin pans for egg muffins, cupcakes, or regular muffins. They just pop right out, and are so easy to clean!

Turkey Sausage Egg White Frittata

Ingredients

*For the turkey sausage

  • 1/2 lb ground turkey
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried sage
  • 1/8 tsp ground nutmeg
  • 1/8 tsp red pepper flakes
  • Pinch of ground ginger

Frittata

  • 2 cups fresh baby spinach chopped
  • 1/2 cup cherry tomatoes halved or quartered
  • 2 cup liquid egg whites
  • 1/4 cup crumbled feta cheese
  • salt and pepper to taste

Instructions

  1. In an oven safe skillet over medium heat, brown the turkey. While browning and breaking meat up with a wooden spoon, add in the salt, pepper, sage, nutmeg, red pepper flakes, and ground ginger. Cook until no longer pink.

  2. Stir in chopped spinach and tomatoes. Cook for about 2-3 minutes or until the spinach begins to wilt. Gently stir in the egg whites, only stirring around once or twice to combine everything. Sprinkle the top with feta cheese. Cook over medium to medium-low without stirring, about 5 minutes. The top will still be liquid, but the sides and bottom should be firm.

  3. Place skillet on the center rack of the oven, turn on the broiler to finish cooking the top. Watch carefully to avoid burning, this should take 2-3 minutes. Slice and serve.

Recipe Notes

For the turkey sausage, I just make a whole pound of ground turkey (double the seasoning), and just use half the meat in the frittata and save half for another breakfast (freezes great too). Just easier that way since ground turkey is generally sold by the pound.
