Peanut Butter Cheesecake Bars

These Peanut Butter Cheesecake Bars have something very special…in the crust…and it’s peanut butter Oreos. In my opinion, the peanut butter Oreos are the best Oreo next to the original. I never buy them because they are one of my biggest weaknesses! You could certainly make these with regular Oreos, but I really wanted to amp up the peanut butter flavor without making the cheesecake part overly rich.

Hello delicious crust! Did I mention these are no bake cheesecake bars? They’re really simple to make. I lined a square pan with foil, or you could use parchment. This helps to remove the bars once chilled, and makes them easier to cut.

A lot of peanut butter cheesecakes or pies that I’ve had usually tend to be very rich, which is ok but sometimes it’s just a little too much. I wanted these to be decadent without being too rich, which I think I achieved! If you really like that richness you can add more peanut butter, but I only use 1/2 cup in the cheesecake filling. I also used all natural peanut butter so there wasn’t any added sugars or oils.

These are great for parties, potlucks, or a simple last minute treat. There’s no baking, and just take a couple hours to set up in the fridge. The perfect make ahead treat! I topped them with shaved dark chocolate, but would be really good with mini chocolate chips or a cocoa powder dusting.

You can make these go further and cut them into bite sized pieces, which is great if you’re serving at a party where people just want a 1 or 2 bite treat! I cut mine into 16 squares and I used a 9×9 square pan. The recipe is easy to double if you want to make a 9×13. Definitely worth making, and truly simple! Enjoy!

Peanut Butter Oreo Cupcakes

Ingredients

  • 3 tbsp unsalted butter melted
  • 20 Peanut Butter Oreos
  • 16 oz cream cheese room temp
  • 1/2 cup peanut butter
  • 1/3 cup powdered sugar
  • 2 tsp vanilla extract

Optional toppings

  • chocolate shavings pictured
  • cocoa powder dusting
  • mini chocolate chips

Instructions

  1. Use either an 8×8 or 9×9 square pan. If you want the bars to come out easily for cutting and serving, line the pan with foil, leaving enough over the sides to lift out.

  2. In a food processor, blend Oreos until fine crumbs form. Add in melted butter and blend until combined. Pour into pan and press down to evenly cover the bottom of the pan to form a crust.

  3. In a medium bowl, add the room temp cream cheese, powdered sugar, peanut butter, and vanilla extract. Beat with an electric hand mixer until smooth and creamy. Taste for sweetness, add additional sugar if desired, but I like the slightly sweet, tart flavor of a cheesecake.

  4. Pour into the pan over the crust, spread evenly. Refrigerate at least 3-4 hours, or overnight to set. Garnish as desired. Slice and serve.
