Avocado Pesto Veggie Sandwiches

These Avocado Pesto Veggie Sandwiches make the perfect work-from-home lunch! This sandwich is a tasty way to get in all your veggies. It’s farmer’s market season, and I know so many people are also tending to their own gardens (bless you).

I’d love to grow veggies some day…the few I’ve tried have not made it! Let’s just say all of my “plants” inside are fake…except the fresh flowers in the kitchen window sill! I’ve tried herbs, tomatoes, and peppers in the past with no luck…I think I’m up for trying again next spring!

Toasting the bread for a sandwich like this is key, because I think it just holds up to all the veggies best this way. When photographing these I used what I had on hand, but I would love fresh pickled red onions, grilled zucchini, and some fresh sprouts, like the kind you get at your favorite sub shop! The avocado pesto is simply mashed avocado, fresh lime juice, and prepared basil pesto.

If you use too many wet veggies your sandwich can become soggy, which is another great reason to toast the bread. You could even use a sub roll or other hearty type of bread. And if you’re grilling any of your veggies for the sandwich, try grilling your bread too to get a nice toasty char!

Ingredients

  • 4 slices whole grain bread lightly toasted
  • 1 ripe avocado
  • fresh lime juice from 1/2 small lime
  • 2 tbsp prepared basil pesto
  • salt and pepper
  • 2 slices provolone cheese or Swiss cheese optional

Suggested Veggies

  • fresh baby spinach
  • arugula
  • micro greens
  • sprouts
  • tomato thinly sliced
  • cucumber thinly sliced
  • roasted red bell peppers patted dry
  • grilled zucchini slices
  • red onion pickled or thinly sliced raw
  • shredded carrots

Instructions

  1. In a medium bowl, mash the avocado, and stir in the prepared basil pesto and lime juice. Leave it as chunky or smooth as you prefer. Add a pinch of salt and a bit of black pepper.

  2. Spread the avocado pesto on each slice of toasted bread, followed by a slice of cheese if you prefer. Layer your desired veggies and top with another slice of toast. Cut in half, and enjoy!

Recipe Notes

Try grilling your veggies if you like a softer cooked veggie. The avocado pesto is fantastic on a BLT sandwich too!
