Lemon Parmesan Roasted Broccoli

Simple and flavorful sides are a weekly necessity, and this Lemon Parmesan Roasted Broccoli makes for a great easy side dish. Add in any other veggies of your choice. This recipe would also work for cauliflower, asparagus, or brussels sprouts.

Getting in my daily veggies always seems to be a struggle. Raw veggies get so boring, especially in the cooler months. Having a warm, flavorful veggie side makes getting them in much more enjoyable!

Roasting until slightly brown and charred on the edges is just perfect. The garlic salt adds great flavor. I use the convection setting on my oven rather than the standard bake mode. It circulates the air better throughout the oven, and I don’t need to toss the veggies halfway through. I just find that you get a better overall roast using that setting. It’s certainly not mandatory though.

Finish the broccoli with fresh grated Parmesan cheese, lemon zest, and a squeeze of fresh lemon juice for a tangy, nutty, peppery, salty bite. So good!

Lemon Parmesan Roasted Broccoli

Bring your broccoli to life with a little lemon and parm!

Ingredients

  • 4 cup broccoli florets
  • Drizzle of olive oil
  • 1/2 tsp garlic salt
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • 1/4 cup fresh grated parmesan cheese
  • Fresh cracked black pepper

Instructions

  1. Preheat oven to 425°. I like to use the convection mode if your oven has it. Line a large baking pan with parchment paper.

  2. In a medium bowl, combine broccoli florets, olive oil, and garlic salt. Toss to combine, and spread onto the baking pan in an even layer. Roast for about 20 minutes or until edges are golden brown and crispy.

  3. Toss with fresh grated parmesan cheese while hot, toss in lemon zest, and a squeeze of half lemon juice. Season with black pepper if desired. Serve immediately.
