Greek Yogurt Mac and Cheese

Greek Yogurt Mac and Cheese is made all in one pot over the stove. Easy, cheesy, and with an added boost of protein from Old Home Foods Greek Yogurt. It adds such a nice little creamy tang, I’m definitely adding this to all my mac and cheese from now on!

Here’s what you need:

  • short cut pasta
  • Old Home Foods Greek Yogurt
  • milk
  • processed cheese cubes
  • white cheddar cheese
  • butter
  • garlic powder
  • salt and pepper

I’m always looking for fun new pasta shapes, so I used these trumpet shaped pasta…which I would not use again for mac. Stick to a classic macaroni or shells, or other small, short cut pasta.

If you generously salt your pasta water, you really don’t need to add much salt at the end. Properly salted pasta water really makes a big difference! Plus, the cheeses will add salt too. If you’re a garlic lover like me, you can up the garlic powder. I just think it adds a little something extra!

This makes a tasty meal on its own, or serve it as a side dish next to your favorite meatloaf recipe.

Greek Yogurt Mac and Cheese

Ingredients

  • 1 lb short cut pasta
  • 1 cup Old Home Foods Greek Yogurt
  • 1 cup milk
  • 10 oz processed cheese, cubed
  • 1 cup shredded white cheddar
  • 2 tbsp butter
  • 1/2 tsp garlic powder
  • Black pepper

Instructions

  1. Bring a large pot of water to a boil, season generously with kosher salt (about 2 tbsp). Cook pasta to al dente or just under, according to package directions. Reserve 1 cup of pasta water before draining. Return drained pasta to pot over low heat.

  2. Add Old Home Greek Yogurt, milk, cubed processed cheese, and butter to the pasta. Stir to combine. As cheese starts to melt, add in white cheddar, garlic powder, and black pepper. Stir in additional pasta water or milk if needed. Stir until cheese is melted. Taste for seasoning and add salt and pepper as needed.
