Chicken Chopped Salad with Greek Yogurt Honey Mustard

The ultimate chopped salad, a Chicken Chopped Salad with Greek Yogurt Honey Mustard dressing! It really hits the spot, even in cooler months. Old Home Greek Yogurt works perfectly in this dressing, you’d never know it was in there. The dressing is sweet, tangy, zippy, and really delicious.

This honey mustard dressing works with Old Home Foods nonfat Greek yogurt or regular Greek yogurt. I use two kinds of mustard, yellow and a Dijon for extra zip. The great tang comes from both the yogurt and apple cider vinegar. Whisk it all up, or throw all the ingredients into a mason jar or dressing shaker and shake away.

It will keep in the fridge for about a week if you want to use it for lunch salads all week. If you’re feeding a crowd it’s prefect for one big salad for serving (with maybe even dressing leftovers).

This Chicken Chopped Salad with Greek Yogurt Honey Mustard is my ideal salad. It has all my favorite toppings like bacon, chicken, corn, tomatoes, smoked gouda cheese, avocado, crispy onions strings, and of course a dreamy dressing.

This salad is perfect for pre-making some lunches for the week. I always say if you’re going through the work to chop up a bunch of salad fixings, make more than one! I would just keep the crispy onion strings off until just before serving to keep the crunch.

Chicken Chopped Salad with Greek Yogurt Honey Mustard

Ingredients

For the dressing

  • 1/4 cup Old Home Foods Greek Yogurt
  • 1/3 cup honey
  • 3 tbsp yellow mustard
  • 3 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp kosher salt
  • Black pepper to taste

For the salad (no measurements here…just make the portion you want to eat!)

  • Romaine or iceberg lettuce
  • Cooked, chopped chicken
  • Shredded smoked gouda cheese
  • Chopped tomatoes
  • Bacon bits
  • Corn
  • Crispy onion strings
  • Sliced avocado

Instructions

  1. In a bowl or dressing shaker, combine all dressing ingredients. Whisk (or shake) until well combined. Taste for seasoning and adjust salt and pepper as needed.

  2. You can make one large shareable salad or individual salads. The dressing should last through about 4-6 individual portions depending on your portion size and how you like to dress your salads. Toss everything together and enjoy!

  3. Dressing will keep in the fridge for up to a week.

Recipe Notes

Use your own judgement and preferences when building your salad. I love a salad filled with just as many toppings as greens. It makes for great texture and variety.
