Whole Wheat Blueberry Waffles

I made these whole wheat blueberry waffles the other weekend mostly for my 8 month old to try a new food. They were a hit with all of us! I used a mini waffle maker because that is all I have, but use whatever style you own. I linked some fun options below if you’re in the market.

Here’s what you need

  • whole wheat flour
  • baking powder
  • salt
  • sugar
  • coconut oil or butter
  • milk
  • egg
  • blueberries

This waffle batter is super easy (most are), everything is combined in one bowl so only takes a few minutes. I like to use frozen blueberries, but you could use fresh. I like frozen because my waffle maker makes such small waffles, big fresh berries would just not work great. If you have a large Belgium waffle maker, juicy fresh ones would be delish!

These were the perfect size for Calvin to grab onto and munch on. He doesn’t have any teeth yet, so once the waffles are soft enough it just breaks off for a bite. See the note in the recipe if you are making these for baby. I waited to add the salt and sugar until I split the batter. I made a portion for him with no sugar or salt, and then added the salt and sugar back in for our potion.

Serve with maple syrup, some fresh berries, and sliced bananas for a delicious family breakfast!

I had leftovers so I threw them in a container and popped them in the freezer for quick baby breakfasts. I’ll just microwave for a few seconds and they’ll be nice and soft again.

Whole Wheat Blueberry Waffles

The perfect weekend family breakfast. Great to freeze for a quick busy morning breakfast too!

Ingredients

  • 1 1/2 cups whole wheat flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp sugar
  • 1 egg
  • 1 1/2 cups almond milk (any dairy or non-dairy works)
  • 5 tbsp melted coconut oil (or melted butter)
  • 1/2 cup frozen blueberries

Instructions

  1. Preheat your waffle maker.

  2. In a medium bowl, whisk together the dry ingredients, flour, baking powder, salt and sugar. (see note if making for baby) Whisk in the egg, milk, and melted coconut oil just until combined. Batter will be lumpy. Gently stir in the frozen blueberries.

  3. Spoon desired amount onto waffle maker, and cook until lightly browned and crispy on the outside, and cooked through the center. Times and number of waffles will vary. I only have a mini waffle maker so cannot confirm on a larger Belgium style waffle maker.

  4. Serve with a little butter, maple syrup, and fresh blueberries. Great with sliced bananas too!

Recipe Notes

I made half this batter for my 8 month old so left out the salt and sugar. Combine everything except that, then split the batter, and add the sugar and salt into the adult portion.
