Parmesan Pesto Mashed Potatoes

I LOVE potatoes. Any form. Baked, mashed, sweet, french fries, hash browns, au gratin, I could go on and on. This simple and easy recipe will get a delicious side of mashed potatoes onto your table in no time!
I took a little help from the store and used Old Home’s Premium Mashed Potatoes. They’re silky, buttery, and so delicious just the way they are…but I added a couple simple bold flavors to take this side to another level with an Italian twist! I use store bought prepared basil pesto and fresh grated Parmesan cheese. Basil pesto is a staple pantry item in my house, I use it a lot to add a boost of flavor to many dishes.
These make a perfect side to your favorite protein, and can come together in less than 15 minutes! Enjoy!

Parmesan Pesto Mashed Potatoes
Ingredients
- 1 pkg Old Home Premium Mashed Potatoes
- 1 tbsp butter
- 1/2 cup fresh grated Parmesan cheese
- 2 tbsp prepared basil pesto
Instructions

Prepare mashed potatoes using the stove heating instructions as directed on the packaging. Once heated, stir in butter, cheese, and 1 tbsp of the pesto.

Transfer to a serving dish. Add the other 1 tbsp of pesto to the top of the potatoes. Using a spoon, gently stir to swirl throughout the potatoes. Garnish with more Parmesan if desired. Serve immediately and enjoy!
