Honey Sesame Chicken Stir Fry

These frozen veggies are perfect for easy meals like this one. Green beans, broccoli, carrots, red peppers, onions, and mushrooms make for a tasty and colorful stir fry. I added chopped boneless skinless chicken thighs, and a sweet honey sesame sauce. You could also use chicken breast, or keep it meatless and add extra veggies!

The honey sesame sauce uses a few pantry staples like garlic and onion powders and honey, soy sauce, and fragrant, flavorful sesame oil. You can control the sweetness and the heat level. Like it spicy? Add red pepper flakes and extra sriracha for a kick!

Serve this Honey Sesame Chicken Stir Fry over some Cascadian Farm Organic Riced Cauliflower or brown rice. It’s delicious either way!

Garnish with toasted sesame seeds and some sliced scallions. What I love about most stir fry recipes, and this one in particular, it comes together in 30 minutes or less. Such a tasty weeknight meal when you’re in a pinch for something quick, yet healthy, and most importantly, delish!

Honey Sesame Chicken Stir Fry

Ingredients

  • 1 1/2 lbs boneless skinless chicken thighs cut into small chunks
  • 1 tbsp sesame oil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 cup water
  • 1 tbsp corn starch
  • 1/4 cup honey
  • 1 tsp apple cider vinegar
  • 2 tbsp low sodium soy sauce
  • 1/2 tbsp ketchup
  • 1 tsp sesame oil
  • 1 tsp sriracha optional
  • Red pepper flakes optional
  • 2 10 oz. pkgs Cascadian Farm Organic Chinese-Style Stirfry Blend frozen veggies
  • 2 tsp toasted sesame seeds
  • 2 scallions sliced
  • Rice for serving

Instructions

  1. In a medium bowl combine the chunked chicken, 1 tablespoon sesame oil, garlic and onion powders, salt, and pepper.

  2. Heat a large skillet over medium-high heat. Add chicken mixture and cook for about 10 minutes, or until chicken is cooked through, stirring occasionally.

  3. In a small bowl whisk together the water and corn starch, set aside. In a medium bowl whisk together the honey, apple cider vinegar, soy sauce, ketchup, sesame oil, and sriracha/red pepper flakes (if desired). Add the water and corn starch mixture into the sauce mixture, whisk to combine.

  4. Pour the sauce into the skillet with the cooked chicken, and bring to a boil. Sauce will begin to thicken. Reduce heat to med-low and stir in Cascadian Farm Organic Chinese-Style Stirfry Blend veggies. Cover and cook for 5-10 minutes, or until veggies are warmed through. Top with toasted sesame seeds and chopped scallions. Serve over rice.
