Grilled Garlic Cheese Toast

A whole new way of getting on the cottage cheese bandwagon trend, Grilled Garlic Cheese Toast! This recipe turned out even better than expected. The Old Home Foods dreamy garlicky whipped cottage cheese underneath melted mozzarella is seriously delicious!

Here’s what you need

  • French bread loaf
  • Old Home Foods Cottage Cheese
  • Garlic
  • Italian seasoning
  • Butter
  • Mozzarella
  • Marinara
  • Parsley

There’s just something spectacular about grilling bread that makes it 100% better than just oven toasted. If you can’t grill, of course just use the broiler setting on your oven. I highly recommend grilling is you’re able. That char is just such a tasty layer of flavor.

In a small food processor or blender, blend the cottage cheese with the minced garlic until whipped and smooth. Once transferred to a bowl, stir in the Italian seasoning. This flavor combination with the buttered toast just reminds me of my favorite local pizza joint’s garlic cheese bread, heavenly.

Spread the mixture onto the grilled buttery toast, and top with shredded mozzarella. Place under the broiler just until melted. Garnish with parsley and serve with warm marinara. I just love garlic cheese bread. Biting into the added cheesy layer of the whipped cottage cheese is such a tasty surprise. You MUST try it for yourself!

Grilled Garlic Cheese Toast

A tasty twist on a classic appetizer, whipped cottage cheese on grilled toast to level up garlic cheese bread.

Ingredients

  • 1 small French bread loaf
  • 3 tbsp butter, melted
  • 1/2 cup Old Home Foods cottage cheese
  • 1 tsp minced garlic, about 1 clove
  • 1/2 tsp Italian seasoning
  • 1 cup shredded mozzarella
  • Chopped parsley for garnish
  • Marinara for dipping

Instructions

  1. Slice bread into 1-inch thick slices, about 10 pieces

  2. Dip each slice into melted butter on one side, if there's enough left, use the rest for the other side of bread. Set aside. Preheat a grill (if using) to about 400°. If not using a grill, use the oven broil setting when ready.

  3. In a food processor or blender, combine the cottage cheese and garlic until smooth. Add into a small bowl and stir in Italian seasoning. Set aside.

  4. Place buttered bread slices onto grill (if broiling, place under broiler and watch closely for browning, then remove). Grill on both sides until browned and toasty. Highly recommend grilling, adds a great char flavor. Remove onto a sheet pan.

  5. Spread the whipped cottage cheese evenly onto each slice. Top with shredded mozzarella. Place under broiler to melt and slightly brown cheese on top. Garnish with chopped parsley and serve with warm marinara.

Recipe Notes

I get my French bread loaf in the bakery section of my local store, and it’s not the super skinny long kind. Those are better for a bruschetta recipe. You want a “thicker” softer loaf.
