Chili Lime Chicken Tacos

Game day season is in full effect, and these Chili Lime Chicken Tacos are perfect for hosting your next game day gathering! Chicken thighs are packed with flavor, grilled to perfection, and served up in Frescados Taqueria Style Mini Tortillas.

All of the flour tortillas are my personal favorite, they are always so soft and fluffy. They also make wraps that are perfect for tucking in your favorite salad for an easy lunch wrap.

The marinade for these chili lime chicken tacos is packed with seasonings. It’s actually a blend of all of my staples, plus some lime juice to kick everything up a notch. I prefer to use chicken thighs. They grill up quick and stay juicy and tender…even if you accidently over cook them!

If you don’t have an outdoor grill, indoor grill top or skillet is just fine, you can even bake them if you prefer. Chicken breasts work great too.

Toppings

Your toppings can be whatever you want them to be! Here are my favorites for these tacos:

  • shredded Mexican cheese blend OR Cotija cheese
  • avocado
  • tomatoes
  • green onion
  • corn (grilled if you can!)
  • shredded lettuce
  • cilantro lime rice
  • salsa
  • taco ranch sauce
  • hot sauce
  • fresh lime juice

I like to serve some cilantro lime rice with these chili lime chicken tacos. It’s actually really good IN the tacos, but also makes a great side. I just buy the box mix with all the seasonings already in the rice, just cook and serve!

A Chili Lime Chicken Taco bar is perfect for game day or any party you are hosting. You can just lay everything out in an assembly line for guests to build their own tacos with the toppings of their choice. Add in some chips and dips and you’re all set!

Highly recommend putting out a variety of Frescados Tortillas too. I love a good grilled flour tortilla, but try their white or yellow corn tortillas if you prefer corn, or have a gluten free guest. Chili Lime Chicken Tacos

Ingredients

For the marinade

  • 1 tsp chili powder
  • 1/2 tsp cayenne pepper
  • 1/2 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 cup lime juice
  • 1/2 cup olive oil any oil works

For the Tacos

  • 2 lbs boneless skinless chicken thighs
  • Frescados Taqueria Style mini tortillas toasted/grilled
  • Diced tomatoes
  • Shredded cheese
  • Chopped avocado
  • Chopped green onions
  • Sweet corn
  • Salsa
  • Taco Ranch
  • Hot sauce

Instructions

  1. In a large bowl whisk together all of the marinade ingredients. Toss in the chicken thighs to coat and marinate for at least 30 minutes in the fridge.

  2. While the chicken is marinating prep any taco toppings you'd like to serve.

  3. Preheat a grill (450°) or skillet over medium heat , cook chicken thighs for about 5-7 minutes per side, or until internal temperature reaches 165°-170°. Allow to rest for 5 minutes. Chop into bite sized pieces.

  4. If you have a gas stove, heat tortillas one at a time over direct flame until warmed and slightly charred. Or warm in a skillet or on the grill. Assemble tacos to your liking with all your favorite toppings!

Recipe Notes

I listed my favorite taco toppings for chili lime chicken, but use whatever you like. I also served mine with cilantro lime rice, yum!
