Chipotle BBQ Pork Burgers
If you’re a burger lover then you’ve gotta try these Chipotle BBQ Pork Burgers! Have you ever had a pork burger? I never really make them at home unless I buy them from the meat market. I have food memories of getting these at small town food tents in the park, and remember always loving them.
These burgers are packed with flavors of chili powder, garlic, onion, and salt and pepper. Simple spices any home cook has in the pantry.
All the spices get mixed right into the ground pork and add so much flavor to an already flavorful protein. To go with the smoky chipotle theme I have going on in the aioli, I used a smoked gouda cheese. You can really use any cheese you like, but I love jazzing up burgers with different cheese varieties.
I cook burgers inside probably more than on the outdoor grill. You can cook these burgers in a skillet, indoor grill pan, or on an outdoor grill. Delicious any way you cook them up!
Let’s talk aioli
The chipotle bbq aioli is three simple ingredients:
- mayo
- bbq sauce
- chipotles in adobo
You can find the chipotles in adobo in the international foods isle of any grocery store. Chipotles in adobo are smoked, dried jalapeños that have been rehydrated. They’re in a can with other spices and packed in a tasty tomato-y sauce. I dice up a couple of the chipotles and also use some of the sauce to give the aioli great flavor.
Anytime I’m making a fun burger I like to use a brioche bun. There’s just something so good about them, and they toast up so nicely while staying super soft. Top these burgers with your favorite fixings like shredded crisp lettuce, fresh juicy tomato, and my fav, crunchy onion strings!

Chipotle BBQ Pork Burgers
Swap out your beef or turkey burgers for these delicious PORK burgers! Full of flavor and can be made on the grill or the stove top.
Ingredients
For the chipotle bbq sauce
- 1/4 cup mayo
- 3 tbsp bbq sauce
- 2 chipotles in adobo diced
- 1 tbsp sauce from the chipotles in adobo
For the burgers
- 1 lb ground pork
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp black pepper
- 1/4 tsp salt
- 1 tsp dried parsley flakes
- Drizzle olive oil
- 4 slices smoked gouda cheese
- 4 brioche hamburger buns toasted
- Lettuce
- Tomatoes
- Crispy onion strings
Instructions

In a small bowl, combine all of the chipotle bbq sauce ingredients. Stir until well combined. Set aside or refrigerate until ready to use.

In a medium bowl combine ground pork, chili powder, garlic and onion powders, parsley, salt, and pepper. Form into 4 equal patties. Drizzle a large skillet with a bit of olive oil, and preheat over med-high heat. Add patties to hot pan, it should sizzle when hot enough. Cook on one side over medium heat for about 6-7 minutes. Flip, and cook on the second side for another 5-6 minutes, or until the internal temperature reaches 160°. Top with cheese slices, cover to melt. Remove from heat.

Spread chipotle bbq mayo on top and bottom of the toasted buns. Add lettuce, tomato, pork burger, and crispy onion strings. Enjoy!
