Easy Mini Meatloaf Muffins
I. Love. Meatloaf. These little guys have been around for quite some time, so you’ve likely seen a hundred similar recipes. I first saw this concept and fell in love with it about ten years go. It was on one of two Food Network shows, either 30 Minute Meals with Rachel Ray, or Semi-homemade with Sandra Lee, or maybe both actually! I definitely call this version of meatloaf semi-homemade because of the stuffing mix, you don’t really have to add much else because all of the great seasonings you want in the meatloaf are right in the stuffing mix! These are perfect for a comforting meal any night of the week, and ready in only 30 minutes! I make these in silicone muffin pans, they just pop out like a breeze, highly recommend! This will certainly not be my one and only meatloaf recipe that I post. There are so many great meatloaf recipes out there, and I love to switch it up once and a while! This is one of Erik’s favorite meals and I hope it becomes a family favorite in your home!
This pictured version actually has a layer of cheese inside of the muffins, just an easy way to turn them up a notch! I also like to top them with crispy onion strings once and a while, enjoy!
Serve along side my Glazed Brussels Sprouts or Garlic Parmesan Orzo!
Easy Mini Meatloaves
Ingredients
- 1 lb lean ground beef or turkey
- 1 box stuffing mix (any flavor) such as Stove Top
- 1 cup water
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp Worcestershire sauce
- salt and pepper
- shredded cheese optional
- crispy onion strings optional
- cooking spray
Sauce topping
- 1/2 cup ketchup
- 1/2 cup BBQ sauce
- 1 tbsp honey mustard
- 1 tbsp brown sugar
Instructions

Preheat oven to 350 degrees, and spray a 12 cup muffin pan with non-stick cooking spray.

Combine beef or turkey, stuffing mix, water, garlic and onion powder, Worcestershire sauce, and salt and pepper in a mixing bowl. Gently combine with your hands or wooden spoon, but be careful not to over mix or the meatloaf will be tough and dense. If meat seems a little dry, add a bit more water.

Evenly fill the 12 cup muffin tin with the meat mixture

Combine all of the sauce topping ingredients in a small bowl, stir until combined.

Spoon about 1+ tablespoon of sauce onto each meatloaf muffin.

Bake at 350 for 25 minutes or until meat is cooked through. If adding shredded cheese to the top, remove after 20 minutes, top with cheese, and bake for another 5 minutes to melt the cheese.

Serve immediately, top with crispy onion strings if desired.
Recipe Notes
This recipe is equally delicious with any protein. I often do a combo of beef and turkey together, I've also used venison and elk.
As usual, I add sriracha to my sauce topping mixture for an extra kick.
For an Italian twist add Italian seasonings to the meat mixture, and swap out the sauce topping with marinara and parmesan cheese!

I made this tonight and it turned out AMAZING! Picky husband AND toddler approved 🙂 Great weekday meal as it took maybe 15-20 min to prep and only another 25 min in the oven. I will be adding this to our rotation for sure!

My wife made this today. Holy heck it was delicious! This needs to be in our regular rotation. And i appreciate the Sriracha suggestion.
I did want to mention it would be helpful to have nutrition info on this, as i do track my macros, and salt, and other items. Of course it’s always possible I’m dumb and just missed it. 🤷♂️
