Slow Cooker Tomato Balsamic Beef Roast

I have completely been slacking in the crock pot department. I went all winter and used my crock pot like twice…what was I thinking?! It’s SO nice to come home after work to a fully cooked meal, and the house smells great! This recipe is so simple…like most crock pot recipes, just dump everything in and turn it on! This is a little Italian twist you could say on a classic pot roast. I take a little help from the store by using a can of French onion soup, so good in slow cooker recipes, I use it in my pork roast too! A can of stewed tomatoes, garlic, and a little sweet and savory action from the balsamic and soy sauce.

Fall apart beef in 8-10 hours, and you don’t have to do any of the work! Great served with garlic mashed potatoes, or your favorite veggies. Try it with my Sour Cream and Chive Smashed Potatoes!

Slow Cooker Tomato Balsamic Beef Roast

Ingredients

  • 3-4 lbs beef chuck roast boneless
  • 1/4 cup low sodium soy sauce
  • 1/2 cup balsamic vinegar
  • 1 can French onion soup such as Campbell's
  • 14.5 oz. can stewed tomatoes
  • 4 cloves garlic smashed
  • fresh ground black pepper

Instructions

  1. Season the roast with salt and pepper on all sides. 

  2. In a medium bowl combine the French onion soup, soy sauce, balsamic, and tomatoes. Pour 1/3 of the mixture into the bottom of the slow cooker. Place roast in crock pot, and pour the remaining mixture over the roast. Drop in the smashed garlic cloves. Cook on low for 8-10 hours.

  3. Serve with your favorite sides like mashed potatoes, pasta, or veggies! Delicious as a sandwich or hoagie French dip roll.
