Turkey Sweet Potato-Tot Egg Bake

If you’re looking for a twist on a traditional breakfast bake, this is your dish! Sweet potatoes are everywhere right now, and I’ve been incorporating them in a lot of my cooking lately, I love them! One pan breakfast bakes are perfect for feeding a crowd and are so easy to customize to your liking. That’s one of the many reasons I love dishes like this, you can really add or subtract almost anything you like. Breakfast bakes are a great way to use up veggies from your fridge, and leftover proteins from the week.

This recipe uses ground turkey sausage, but you could use pork sausage, bacon, ham, chicken, really anything you like! I love bell peppers with eggs so I use both red and green bell peppers in this recipe. If you’re looking to add a little heat, dice up a jalapeno! Throw in your favorite shredded cheese and some seasoning and you’ve got a fabulous breakfast! Great for a brunch buffet, or portion out for breakfast all week long.

Turkey Sweet Potato-Tot Egg Bake

Ingredients

  • 1 lb turkey sausage
  • 1/2 medium red bell pepper chopped
  • 1/2 medium green bell pepper chopped
  • 1/2 small yellow onion minced
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • salt and pepper
  • 9 eggs
  • 1/2 cup milk
  • 12 oz sweet potato tots
  • 1 1/2 cups shredded pepper jack cheese

Instructions

  1. Preheat oven to 375 degrees. Spray a baking dish (9x13 or slightly smaller) with non-stick cooking spray. You could also make this using a well seasoned cast iron skillet. 

  2. Brown turkey sausage in large skillet with bell peppers and onions until cooked through, about 10 minutes. Remove from heat. Stir in frozen sweet potato tots and 1 cup of shredded cheese. Transfer to greased baking pan.

  3. In a medium bowl whisk together eggs, milk, onion and garlic powders, and salt and pepper. Pour egg mixture over the turkey mixture. Top with remaining 1/2 cup of shredded cheese. Bake for 45-55 minutes or until eggs are set. Cut into squares and serve warm. 

Recipe Notes

You can swap/add/drop many of the ingredients to your liking. Add extra of your favorite veggies, make it vegetarian, or use pork sausage. Regular tots could also be used in place of sweet potato tots. 

Try adding some chili powder for a little extra spice without heat!

Baking time will vary depending on the size of your baking dish.
