Sweet Sticky Brown Rice

If you are familiar with the Mexican chain Rojo Mexican Grill then you’ve likely had their sweet rice. My husband is obsessed with this place, and the sticky rice is his favorite…as in he swaps the re-fried beans for another side of sticky rice. The last time we had dinner there our server asked, “do you guys like to cook at home?” Ahhhh…yes! He came back with a pen and paper and told us the ingredients in the sticky rice recipe! Honestly it turned out pretty great the first time I made it. I was conservative on the ingredients and adjusted as I went until I liked it.

This is the perfect side for your next taco or burrito night, and absolutely fabulous with my Chipotle Chili Lime Meatball Burrito Bowls. The sweetness is such a great contrast to the spicy Meatballs! Seriously so good!

Sweet Sticky Brown Rice

Ingredients

  • 2 cups instant brown rice uncooked
  • 1 1/2 cups chicken broth low sodium
  • 1/4 cup heavy cream
  • 1 1/2 tbsps honey
  • 8.5 oz canned corn kernels drained
  • salt
  • black pepper

Instructions

  1. Bring the chicken broth to a boil in a medium sauce pan. Stir in brown rice. Turn heat to low and cover for 5 minutes, stirring occasionally to avoid boiling over. Remove from heat and let sit covered for 5 minutes.

  2. Stir in cream, honey, corn, salt and pepper. Cover and let sit off of the heat for 5-10 minutes. Taste for salt and pepper seasoning. If wanting it sweeter, add more honey, or creamier add more cream.

Recipe Notes

You can make this with instant white rice, but you'll want to follow the cooking instructions on the package. Use chicken broth in place of water for more flavor. For ultimate sticky rice you can use regular white rice (not instant) to get a more authentic sticky rice.

Add in some fresh chopped cilantro for an added flavor boost!

      Awesome, hope you like it! I’ve tried it now with a few different rice varieties, and it’s been good with all. Not as “sticky” as traditional Rojo, but still delish!

    How long would you cook it if I was to use normal brown rice instead of instant?

      Hi! I would just follow cooking times listed on the rice package you are using.
