Peanut Butter Banana Chocolate Chip Muffins

Peanut Butter Banana Chocolate Chip Muffins are the ultimate flavor combo! Of course chocolate and peanut butter are delicious together, but so are peanut butter and banana. Combine them all for a tasty treat! These muffins make for an easy grab and go breakfast or snack. I like to warm mine up with butter and enjoy with coffee.

These muffins come together in a flash, and in just one mixing bowl! Quick and easy using basic baking ingredients. I add in a bit of oats for some added texture, but if its not something you keep on hand you can certainly omit for a smoother texture.

There is no shortage of chocolate chips in these muffins. I even added a few to the tops of each muffin for a little something extra. The flavors of peanut butter, chocolate, and banana blend so well together. Not one flavor over-powers the other, and you get a hint of them all in each bite.

Peanut Butter Banana Chocolate Chip Muffins

Ingredients

  • 1/2 cup unsalted butter (1 stick) softened
  • 1/2 cup brown sugar
  • 1/2 cup Old Home creamy peanut butter
  • 2 ripe bananas mashed
  • 1/4 cup milk
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all purpose flour
  • 1/2 cup old fashioned oats
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 375°. Line muffin tins with liners if not using silicone baking pans.

  2. In a large bowl or stand mixer, beat softened butter and brown sugar until well blended. Add in peanut butter, mashed bananas, eggs, milk, and vanilla extract. Mix on medium speed until well combined.

  3. Stir in flour, oats, baking soda and powder, and salt. Stir just until combined. Stir in chocolate chips. Scoop batter equally into muffin pans. Bake for 18-23 minutes, or until toothpick comes out clean. Cool and enjoy!

Recipe Notes

Chopped walnuts would be a great addition to these muffins!
