Monster Cookie Granola

Level up your granola with this Monster Cookie Granola. Everything you love about a monster cookie, but in crunchy snackable granola form. I love it in my vanilla Greek yogurt, but is great just on it’s own as a snack. It would also be real tasty mixed into some vanilla ice cream for a little treat!

Here’s what you need

  • oats
  • peanut butter
  • honey
  • vanilla extract
  • mini m&m’s
  • mini chocolate chips
  • toasted almonds

Mix everything in a large bowl to coat and combine. This makes about two large baking sheet pans, so the recipe could easily be cut in half if you want a smaller portion.

Spread onto parchment lined baking sheets and bake until golden! It’s important to let it cool completely, it will crisp and firm up as it cools.

This Monster Cookie Granola will satisfy that cookie craving! Perfect packable snacks for kids AND adults. Just store in an air-tight container.

Monster Cookie Granola

Everything you love about the cookie but in granola form! Delicious on it's own, or top your favorite yogurt or ice cream.

Ingredients

  • 1 cup peanut butter
  • 3/4 cup honey
  • 2 tsp vanilla extract
  • 4 cups old fashioned oats
  • 3/4 cup mini M&Ms
  • 1/4 cup mini chocolate chips
  • 1 cup slivered or sliced almonds
  • Pinch of salt

Instructions

  1. Preheat oven to 350°. Line 2 large baking sheet pans with parchment paper.

  2. Add almonds to a skillet over medium heat. Stir until slightly golden brown and fragrant, about 5 minutes. Remove from heat.

  3. Add peanut butter and honey to a large microwave safe bowl. Microwave for 30-45 seconds to loosen up and peanut butter is slightly melty. Whisk together until combined. Whisk in vanilla extract. Stir in oats until coated. Gently stir in M&M's, chocolate chips, and toasted almonds. Divide onto prepared baking pans, and spread out, leaving some clumps.

  4. Bake for about 20-23 minutes, rotating pans halfway through if baking on different rack levels. Allow to cool completely before breaking into chunks. Granola will crisp as it cools.

  5. Enjoy on it's own for a snack, or add it to vanilla yogurt or top your favorite ice cream. Store in an air tight container.

Recipe Notes

I used an all natural peanut butter, but any variety would work. A crunchy peanut butter would be good too for added peanut chunks.
