Carolina Gold BBQ Pork Sandwiches
Not your average pulled pork sandwiches, these are Carolina GOLD BBQ Pork Sandwiches. Actually…it’s simply a recipe for the sauce, and I used my leftover All Purpose Slow Cooker Pork for the sandwiches. It’s super easy, can make a ton depending on the size roast you choose, and it freezes great for leftovers.
It’s such a dreamy color…hence Carolina Gold. You likely already have everything to make this sauce, as it uses pantry staples (at least for me). Yellow mustard is the base, and then jazzed up with a handful of tangy, sweet, and spicy ingredients. Make it as sweet or spicy as you want by adjusting measurements to your liking.
It’s good in the fridge for about a week, but you can also freeze this Carolina Gold BBQ sauce to use it next time you make a roast. Also would be super good on chicken wings or pork chops!
As mentioned in my recipe notes, a hot tip for the slaw on the sandwich…forego a traditional slaw and grab a dill pickle salad kit. A few different brands make them, and it’s perfect to top these sandwiches! My current favorite ingredient is crispy onion strings, they make so many things just a touch better! Salty, crispy, and a great flavor addition.

Carolina Gold BBQ Pork Sandwiches
A tangy and delicious sauce to top your favorite pork sandwiches!
Ingredients
For the BBQ sauce
- 1 cup yellow mustard
- 1/4 cup apple cider vinegar
- 2 tbsp honey
- 1/4 cup brown sugar
- 1 tbsp olive oil
- 1 tbsp ketchup
- 1 tbsp hot sauce
- 2 tsp Worcestershire sauce
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp chili powder
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
For the sandwiches
- Pulled pork
- Brioche buns toasted
- Prepared coleslaw
- Sliced pickles
- Crispy onion strings
Instructions

In a small sauce pan over low heat, whisk together yellow mustard, apple cider vinegar, honey, and brown sugar. Combine and warm through until sugar is dissolved. Remove from heat.

Whisk in ketchup, hot sauce, Worcestershire sauce, and all spices. Once well combined, toss desired amount with warm pulled pork. Sauce can be made ahead of time and stored in the fridge for about a week. Also freezable!

Assemble sandwiches by placing pulled pork on toasted brioche, top with a drizzle of additional gold sauce, topped with slaw, onion strings, and pickles, yum!
