Cheesy Tortellini with Peas and Asparagus
This Cheesy Tortellini with Peas and Asparagus is THE perfect spring time dish. It’s done in a flash…as in less than 30 minutes, maybe even 20. Have you ever had Boursin cheese? This is not a sponsored post, I just love this cheese and is such a great shortcut to a creamy sauce.
I often add a dollop or two of cream cheese to any sauce that I want to add a bit of creaminess to. Boursin cheese is perfect for that. It’s like a cross between cream cheese, goat cheese, and feta. I’ve made this recipe with two of the flavors and both turned out fabulous. The shallot and chive, and garlic herb both work great.
The cheese tortellini cooks in just a couple minutes, so fast! The sauce comes together in the same amount of time as the pasta cooking. Honestly waiting for the water to boil is what takes the longest in this recipe.
So creamy and packed with flavor. The asparagus are fresh and crispy, and the peas bright and vibrant, perfect for spring. This will be a repeat dish at my house. Perfect for a quick weeknight meal or crazy simple dinner party course.
You could top it with sliced grilled chicken for added protein, or even add additional veggies like roasted red peppers and mushrooms.

Cheesy Tortellini with Peas and Asparagus
Such an EASY and quick pasta dish that's packed with fresh veggies, but also creamy and comforting!
Ingredients
- 9 oz pkg cheese tortellini
- 3 tbsp unsalted butter
- 1 shallot (about 1-2 tbsp minced)
- 3 cloves garlic minced
- 1 cup chopped asparagus about 1/2 bundle
- Salt and pepper
- 1/2 cup chicken broth
- 5.2 oz Boursin cheese (garlic & herb or chive & shallot)
- 1 cup peas (fresh or frozen)
- 1/2 cup fresh grated parmesan cheese plus more for serving
- Reserved pasta water
- Red pepper flakes optional for serving
Instructions

Bring a large pot of salted water to a boil. Cook tortellini about 1½ minutes less then the package instructions. Prep your other ingredients while you wait for water to boil. Reserve a cup of pasta water just before draining.

In a medium skillet, melt butter over medium heat, add minced shallot and garlic. Sauté for 1-2 minutes. Stir in chopped asparagus. Season with a bit of salt, and plenty of black pepper. Cook for about 2 minutes.

Stir in chicken broth and Boursin cheese, breaking up the cheese with a wooden spoon until melted. Stir in peas and drained tortellini. Stir in grated parm. If needed, add reserved pasta water to loosen sauce up. Taste for seasoning and add additional salt and pepper if desired. Serve with additional sprinkle of parm and red pepper flakes for a kick.
Recipe Notes
This dish comes together very quickly, so make sure your veggies and other ingredients are prepped and ready for cooking BEFORE you cook your pasta. The sauce comes together in about the same time your pasta will cook.
I’ve made this recipe with both listed flavors of Boursin cheese and they are both very good with similar flavors.

Hi there! I love this recipe, thanks for reaching out. The serving size really depends on how you serve it. It could easily serve 3-4 people as a main, but also depends how hungry you are and your portions you are used to eating! If it is just a side dish or if you add protein it will go further.
