Chicken Bacon BBQ Ranch Melts
This is a sandwich that came together with what I like to call “mustgo” night; aka “everything must-go”. I had leftover rotisserie chicken, bacon in the freezer, bread in the freezer, and condiments in the fridge. An easy yet flavorful lunch or dinner that comes together in no time! What’s not to love…chicken, bacon, cheese, bbq sauce, and ranch!? I also threw in some avocado slices; I love avocado with chicken and bacon, yum!
I used an onion rye bread I had from the deli, and I’ve used sourdough, but any hearty bread you have on hand would work great. As usual…I like to add a little spice to a lot of my dishes so I throw in a dash of sriracha in the sauce, but totally optional if you’re not into it! This would be just as great in a wrap. Have you ever tried grilling a wrap? It’s so good! You get a nice crispy outside, I love it! Enjoy!
Chicken Bacon BBQ Ranch Melts
Ingredients
- 4 slices sourdough bread
- 4 slices bacon cooked
- 1 1/2 cup chicken rough chopped
- 1/2 tbsp BBQ seasoning such as Grill Mates
- black pepper
- 2 slices cheddar cheese
- 1 avocado sliced
- 2-3 tbsp butter or margarine
- 1/4 cup BBQ sauce
- 1/4 cup ranch dressing
- sriracha optional
Instructions

In a small bowl combine the bbq sauce and ranch dressing. Add desired amount of sriracha if looking for a little kick.

In another bowl, combine chopped chicken, bbq seasoning, black pepper and 1 tbsp of the bbq/ranch mixture. Stir until well combined.

Assemble the sandwiches: spread some of the sauce onto all four slices of bread. Place half the chicken on one slice of bread, and half on another. Top the chicken with a slice of cheese, followed by avocado slices, finished with 2 slices of bacon on each sandwich. Top with other slice of bread.

Preheat flat-top skillet over med-high heat. Spread tops of sandwiches with butter or margarine. Place buttered side down onto the heated skillet. Butter other side of sandwich. Cook until golden and crispy, flip and cook other side until golden and crispy.

Serve with any remaining bbq/ranch sauce for dipping. Yum!
Recipe Notes
You could use leftover chicken breast, turkey, or even chicken strips in this recipe. This would also make a great wrap, hot or cold! I love a grilled wrap, they get a nice crispy outside, it's delish! You can grill it indoors just like you would a grilled cheese on a flat top.
