Apple Walnut Tuna Salad

This recipe was inspired by a café I worked at in college; it was one of the most popular menu items if I remember right! I actually never thought that I liked canned tuna until I tried it from the café. My version subs out most of the mayo with Greek yogurt. If you haven’t started using Greek yogurt I highly recommend it! It is such a great substitute for mayo and sour cream, I go through almost a tub a week! It’s low in fat (I use fat free) and calories, and high in protein, and in most recipes you would never know that it was not mayo or sour cream. Try it out!

This tuna salad is light, fresh, and full of great textures and flavors. The apples add a juicy sweetness, and the walnuts are a nice added crunch. I made this recipe for lunch and used a low carb wrap with a leaf of lettuce for added crispness, so good! You could even add it on top of a lettuce salad for some added protein. This is a great snack to scoop up with your favorite crackers, but just as satisfying for lunch in a wrap, sandwich, or pita pocket! Hope you like it!

Apple Walnut Tuna Salad

Ingredients

  • 12 oz tuna canned, drained
  • 1/4 cup Plain Greek yogurt
  • 2 tbsp mayo
  • 1/2 tsp dried onion flakes
  • 1/4 tsp salt
  • dash black pepper
  • 1 medium diced red apple
  • 1/4 cup chopped walnuts

Instructions

  1. In a medium bowl combine all ingredients and stir until well combined. If you like your salad with more dressing, add more Greek yogurt 1 tbsp at a time until you reach your desired consistency. 

  2. Taste for seasoning, adjust salt and pepper as needed. Serve on a salad, in a wrap or pita pocket, or scoop up with your favorite crackers. Enjoy!

Recipe Notes

Can be served immediately, but best chilled for about an hour. Salad will keep in the refrigerator for a couple days, but it's best when fresh!

You could sub out onion powder if you do not have onion flakes, but you may want to use less (start with 1/4 tsp).

Any apple will work, I've only used Honeycrisp because they are my favorite and are sweet and crisp!
