Waldorf Chicken Salad
There are many variations of a Waldorf Chicken Salad. Traditionally the salad does not include chicken, and consists of just the fruit and nuts with mayo. I’m all about jazzing up classic recipes here, so this is my version with added chicken and a few other flavorful add-ins.
This is a great use of rotisserie chicken, or leftover chicken from another dish. For chicken salads I almost always use frozen chicken chunks, or just chicken breast cut into chunks before skillet cooking. I like to get the edges of the chunks a little charred and crispy, whereas rotisserie chicken is very soft. You could even use crispy chicken strips cut up, that would be tasty!
The dressing
I’m a mayo fan, but not for this salad. The combination of Greek yogurt and Miracle Whip gives this salad a burst of tang that you cannot get from mayo. The traditional Waldorf salad uses sugar to sweeten the mayo, but if you use Miracle Whip it’s already got a sweet tang that this salad needs.
A bonus with this Waldorf Chicken Salad is that everything can get stirred in just one bowl, easy! Delicious eaten as is, but I prefer it in a wrap, lettuce cup, or pita pocket!
So yummy and perfect for easy spring and summer lunches! Hope you enjoy!

Instructions
-
Combine all ingredients into a large bowl and stir well to combine. Taste for seasoning and adjust salt and pepper accordingly. Best served chilled after about 30 minutes to allow flavors to combine.
Recipe Notes
You can use red or green grapes, or both! Same with apples, just use whatever is your favorite. I recommend toasting your walnuts, it just adds a nice depth of flavor. I do this in a small skillet over medium heat for about 5 minutes.
