Add cottage cheese, cream cheese, and pickle juice to a food processor. Process until smooth. Add in all of the spices, hot sauce, and gently pulse until mixed through. Remove blade and gently stir in chopped pickles. Transfer to a bowl and cover. Chill for a few hours. Flavors will become more bold and flavorful the longer it sits.
Garnish with chopped scallions, and serve with crackers, naan dippers, and veggies.
