Pineapple infused vodka, shaken and served straight up! So delish!
Slice off the top and bottom of the pineapple. Gently slice off the outer layer. Slice the pineapple into 1-inch thick round slices, cut each slice in half so you have half circles. Arrange the slices into a large beverage dispenser, stacking evenly. I used about 1.5 pineapples.
Pour the vodka over the pineapple. You want the pineapple covered in vodka. Cover and allow to sit for 12-14 days at room temperature.
Drain infused vodka into a pitcher or storage container. Discard soaked pineapple (or eat at your own risk). You can strain through a fine mesh strainer if you have seeds and pulp that you want to discard.
For one martini: fill a shaker half way with ice, add 4-5oz of vodka to the shaker, shake vigorously for 1 minute. Pour into martini glass, it should be cold, and foamy on top. Garnish with fresh pineapple or sprig from pineapple top.
Can also be served in a low-ball glass over ice. Store vodka in a pitcher in the fridge.
