Combine all ingredients into a food processor or blender. Blend until smooth. Taste for seasoning and adjust salt, and add pepper (if desired).
Transfer to an air tight container, and refrigerate for 30-60 minutes before serving to allow flavors to come together. Serve with fresh veggies, crackers, or bread.
For the fresh herbs I just tore off palmfuls, don't worry if a little stem gets into the mix.
