Chili Lime Chicken Tacos

Ingredients

For the marinade

  • 1 tsp chili powder
  • 1/2 tsp cayenne pepper
  • 1/2 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 cup lime juice
  • 1/2 cup olive oil any oil works

For the Tacos

  • 2 lbs boneless skinless chicken thighs
  • Frescados Taqueria Style mini tortillas toasted/grilled
  • Diced tomatoes
  • Shredded cheese
  • Chopped avocado
  • Chopped green onions
  • Sweet corn
  • Salsa
  • Taco Ranch
  • Hot sauce

Instructions

  1. In a large bowl whisk together all of the marinade ingredients. Toss in the chicken thighs to coat and marinate for at least 30 minutes in the fridge.

  2. While the chicken is marinating prep any taco toppings you'd like to serve.

  3. Preheat a grill (450°) or skillet over medium heat , cook chicken thighs for about 5-7 minutes per side, or until internal temperature reaches 165°-170°. Allow to rest for 5 minutes. Chop into bite sized pieces.

  4. If you have a gas stove, heat tortillas one at a time over direct flame until warmed and slightly charred. Or warm in a skillet or on the grill. Assemble tacos to your liking with all your favorite toppings!

Recipe Notes

I listed my favorite taco toppings for chili lime chicken, but use whatever you like. I also served mine with cilantro lime rice, yum!
