Peanut Butter Popcorn

Ingredients

  • 1/4 cup organic unrefined coconut oil
  • 2/3 cup popcorn kernels
  • 2 tbsp unsalted butter melted

For the peanut butter topping

  • 4 tbsp powdered peanut butter
  • 2 tbsp powdered sugar
  • 1 tsp salt

Instructions

  1. In a small bowl, whisk together the peanut butter topping ingredients and set aside.

  2. In a large pot or Dutch oven (6-quart or larger), heat coconut oil over medium-high heat with 2 popcorn kernels. Cover until you hear the kernels pop. Remove the 2 popped kernels. Stir in the rest of the popcorn kernels. Cover, but with the lid vented to allow some steam to escape. Once the popping slows, and there are about 2 seconds between pops, remove from heat and take the lid off to allow steam to escape to avoid soggy popcorn.

  3. Drizzle with melted butter, stir to coat. Sprinkle and stir in the powdered peanut butter mixture. Enjoy!

Recipe Notes

I've found this popping method is helpful to avoid overheating your oil, and burning the popcorn. If your oil starts to smoke, it's too hot and your popcorn could taste burnt. Other oils would work as well, like avocado oil, or vegetable oil.

The powdered peanut butter mixture can be sprinkled on fresh popped bagged popcorn as well. It just needs something to adhere to, like melted butter.
