In a medium bowl, whisk all dressing ingredients together until smooth. Chill until ready to dress salads.
Arrange salad ingredients into bowls. Drizzle with poppy seed dressing, toss and enjoy!
I don't use exact measurements when I make a salad so I opted to do the same when writing this recipe. You can make the dressing and use it throughout the week on 1-6 salads depending on how many you're feeding and portion size.
I like to use chicken to make it a meal, but certainly optional. Any fruit would be great in this, I just used what was in season and looked good at the store.
