Grilled BBQ Vegetables

Ingredients

  • 1 med sweet potato chopped
  • 3 baby red potatoes chopped
  • 1 red bell pepper chopped
  • 1/2 small red onion chopped
  • 1 cup brussels sprouts chopped
  • 1 1/2 tbsp BBQ Seasoning and Rub recipe blend linked in post
  • 2 tbsp olive oil or avocado oil

Instructions

  1. Add all of the chopped veggies into a bowl. Drizzle with the olive/avocado oil, and sprinkle with BBQ seasoning. Stir to coat all of the veggies. Adjust oil and seasoning to taste depending on volume of veggies.

  2. Preheat grill to 350-400 degrees. Add veggies to grill basket and grill for about 30 minutes or until veggies are fork tender. Stir occasionally.

See the original blog post for the BBQ Seasoning and Rub blend. It is a combo of garlic, onion, parsley, chili powder, salt, smoked paprika, cumin, black pepper, cayenne, and dried mustard. The perfect summer bbq seasoning blend!

If you do not have a grill basket you can make foil packets. Divide veggies up into 4 servings and package them in foil that is tightly sealed. Grill for 20-30 minutes, flip packets over halfway through cooking. 

Any veggies you like would be delicious in this. Asparagus, cauliflower, and all the summer squashes from your farmers markets and gardens!
