In a large skillet over med-high heat, brown the ground meat, diced onions, and garlic. Break up the meat with a wooden spoon, and cook until meat is cooked through, about 10 minutes. Add in the remaining sloppy joe ingredients, stir until combined and simmer on low until heated through.
Arrange chips on a large baking sheet pan. Top with half of the shredded cheese. Scatter the sloppy joe mixture over that, followed by the reaming shredded cheese. Arrange the caramelized onions over the top. Bake for about 5 minutes or until the cheese is melted and bubbly.
This sloppy joe recipe is my sweet and spicy turkey sloppy joe recipe from the blog! Make a double batch of the meat for another meal!
