Sloppy Joe Nachos with Caramelized Onions and Avocado Crema

Ingredients

For the sloppy joes

  • 1 lb ground beef or turkey
  • 1/2 yellow onion diced
  • 2 cloves garlic minced
  • 1/2 cup ketchup
  • 3 tbsp bbq sauce
  • 1 tbsp honey mustard
  • 1 tbsp yellow mustard
  • 1 tbsp worcestershire sauce
  • 1 tbsp brown sugar
  • sriracha optional
  • salt and pepper to taste

For the caramelized onions

  • 1 large yellow onion sliced
  • 1-2 tbsp olive oil
  • salt and pepper

For the nachos

  • 1/2 bag tortilla chips
  • 2 cups shredded cheddar or monterey jack cheese
  • 2 roma tomatoes diced
  • 2 scallions sliced
  • 1 fresh jalapeno sliced, optional
  • shredded lettuce optional
  • avocado chopped, optional
  • sriracha optional

For the avocado crema

  • 1 avocado ripe
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 tsp garlic powder
  • 1 tsp lime juice
  • salt and pepper

Instructions

For the caramelized onions

  1. Heat olive oil over med-high heat in a non-stick skillet. Add sliced onions, and cook on med to med-low until soft and brown in color, stirring occasionally. Season with salt and pepper. Turn off heat when they reach desired doneness.

For the avocado crema

  1. In a food processor, combine all of the avocado crema ingredients. Blend until smooth, taste and adjust seasoning if desired. Keep in refrigerator until ready to use.

For the sloppy joes

  1. Preheat oven to 400 degrees.
  2. In a large skillet over med-high heat, brown the ground meat, diced onions, and garlic. Break up the meat with a wooden spoon, and cook until meat is cooked through, about 10 minutes. Add in the remaining sloppy joe ingredients, stir until combined and simmer on low until heated through.

Nacho Assembly

  1. Arrange chips on a large baking sheet pan. Top with half of the shredded cheese. Scatter the sloppy joe mixture over that, followed by the reaming shredded cheese. Arrange the caramelized onions over the top. Bake for about 5 minutes or until the cheese is melted and bubbly.

  2. Top with diced tomatoes, jalapenos, scallions, avocado, lettuce, and drizzle with avocado crema, and sriracha (optional). Dig in!
