A cheesy Italian twist on meatloaf.
Preheat oven to 425°
In a medium mixing bowl, gently combine pork, beef, panko, Italian seasoning, garlic salt, and red pepper flakes if desired. Be careful not to overmix, I like to use a fork to gently stir. Divide into 4 equal portions. Form into oval loaves.
In a small bowl combine cream cheese and mozzarella cheese. Divide into four equal portions. Taking one of the meatloaves, press to make an indent into the middle, press a cheese portion into the indent, and re-form the meat around it to cover the cheese, and re-form into an oval loaf. Repeat with remaining cheese and meatloaves. Place onto a parchment lined baking dish.
Spoon the marinara evenly over the meatloaves. Bake for 25-30 minutes. Garnish with grated parmesan cheese, and serve with your favorite side salad or roasted veggies.
Use a ground beef with higher fat content to keep it moist. Ground pork is great, but Italian sausage, or turkey sausage would add great flavor.
Italian seasoned bread crumbs would be a good substitute if you do not have panko bread crumbs.
