Ingredients

For the chipotle bbq sauce

  • 1/4 cup mayo
  • 3 tbsp bbq sauce
  • 2 chipotles in adobo diced
  • 1 tbsp sauce from the chipotles in adobo

For the burgers

  • 1 lb ground pork
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1 tsp dried parsley flakes
  • Drizzle olive oil
  • 4 slices smoked gouda cheese
  • 4 brioche hamburger buns toasted
  • Lettuce
  • Tomatoes
  • Crispy onion strings

Instructions

  1. In a small bowl, combine all of the chipotle bbq sauce ingredients. Stir until well combined. Set aside or refrigerate until ready to use.

  2. In a medium bowl combine ground pork, chili powder, garlic and onion powders, parsley, salt, and pepper. Form into 4 equal patties. Drizzle a large skillet with a bit of olive oil, and preheat over med-high heat. Add patties to hot pan, it should sizzle when hot enough. Cook on one side over medium heat for about 6-7 minutes. Flip, and cook on the second side for another 5-6 minutes, or until the internal temperature reaches 160°. Top with cheese slices, cover to melt. Remove from heat.

  3. Spread chipotle bbq mayo on top and bottom of the toasted buns. Add lettuce, tomato, pork burger, and crispy onion strings. Enjoy!

Recipe Notes
