Baked Oven Fries with Spicy Garlic Aioli

Ingredients

  • 4 Idaho potatoes
  • cooking spray
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • seasoned salt to taste
  • pepper to taste
  • 1 tsp dried parsley flakes
  • red pepper flakes optional to taste

Aioli

  • 1/2 cup ketchup
  • 1/4 cup mayo
  • 2 tbsp sriracha
  • 4-5 cloves roasted garlic mashed
  • 1/2 tsp dried parsley flakes
  • salt and pepper

Instructions

  1. Preheat oven to 425 degrees.

  2. Slice washed potatoes in half length wise, and then slice into 1/4 inch discs. Place slices into a medium bowl. 

  3. Add garlic powder, onion powder, salt, pepper, parsley, and red pepper flakes. Toss until coated. Arrange in an even layer on cookie sheet that has been sprayed with cooking spray. Bake until the edges are golden, about 15-20 minutes. Serve with Spicy Garlic Aioli. 

Aioli

  1. Slice the top off of the entire garlic bulb so the tops of the gloves are exposed. Place the bulb in a microwave safe bowl, drizzle with olive oil, 1 tablespoon of water, and a salt and pepper. Cover with microwave safe plate or lid. Microwave at 50% power level for 3 minutes. Bowl will be hot, careful! Turn bulb around in oil to re-coat, and microwave for another 3 minutes at 50% power level. Cloves should be soft and mash-able. Squeeze gloves out of the shells and mash.

  2. In  a small bowl mix all of the aioli ingredients together, along with the mashed roasted garlic. Serve along side oven fries, or top a burger!

Recipe Notes

Any kind of potato can be used for this recipe, you'll just want to adjust portion to be the equivalent of 4 baking potatoes. For the aioli, make ahead of time if possible; this will allow the roasted garlic to flavor the rest of the ingredients.
